Hospitals and nursing homes that are part of the Chesapeake Food Leadership Council in Maryland buy local produce and sustainable meats for patient meals to reduce waste and costs. FutureCare Cherrywood dietitians say that when the nursing home began using local produce, cooking from scratch and offering healthier foods, costs went down and residents' complaints disappeared.
