Since federal regulations took effect requiring students to eat healthier meals at school, one elementary-school principal has tapped his super powers to encourage students to eat their required fruits and vegetables. It appears to be working, with salad consumption up 30% at the school since principal Scott Davis became his alter ego Saladman. Such efforts highlight the increasingly creative approaches that schools are taking to promote and serve healthy meals -- a popular trend according to a recent School Nutrition Association survey.
