Rex Hospital is seen as first in N.C. to remove all fried foods

Rex Hospital in Raleigh, N.C., reportedly is the first in the state to eliminate all fried foods from its cafeteria and patient menus, although Duke Hospital says it will not have fryers in new cafeterias it opens. Rex officials said kitchen staff has been trained to cook from scratch rather than using canned or frozen foods.
