The heat diffuser is a little-known kitchen utensil that meets a very specific, but potentially very common, need. Intended to make the distribution of heat more even and less direct, heat diffusers go over a burner and under a pot or pan to facilitate cooking over a very low flame or with a delicate piece of crockery, or to eliminate hot spots or uneven cooking temperatures.
