Sushi craze sparks foreign influence

America's sushi craze has caused a shortage of available expert Japanese chefs who have mastered the 1,400-year-old cuisine. Without many Japanese chefs to choose from, an increasing number of sushi bars have begun hiring sushi chefs from nontraditional locales, such as China, Vietnam and Honduras.
