Noma's food poisoning outbreak alarms other restaurant managers

After the world's best restaurant, Noma in Copenhagen, Denmark, experienced a food-poisoning outbreak in February, restaurant owners and managers around the globe are reevaluating their food safety policies to ensure the same does not happen in their establishments. “Food hygiene is the one thing that every restaurant has got to get right,” says David Moore, owner two restaurants in London. “It doesn’t matter what end of the market you’re in, it’s got to be perfect. Your customers’ health is at stake, and so is your reputation.”
