Schools strike balance between nutrition standards, taste

School nutrition professionals in a Georgia district are working to prepare meals that meet new federal nutrition guidelines but also are appealing to students -- and cost-effective. Part of the transition has included the addition of more fruits, vegetables and whole grains. "By serving those options, putting them out there, encouraging them to try them," Lydia Martin, the nutrition director for Savannah-Chatham County Schools, said, "[t]hen hopefully they will be a fruit and vegetable lover."
