Nestle ice cream researchers seek an avalanche of insight

In a quest for better ice cream, researchers at Nestle are scanning its structure with X-ray equipment typically used to examine ice crystal formation when studying avalanches. "Previously, we could not look inside ice cream without destroying the sample in the process," said Nestle food scientist Cedric Dubois.
