The lion's share of fast-casual sales happen at chains and Panera, Chipotle, Panda Express, Zaxby's and Five Guys command about 40% of the $22 billion in annual revenue, according to Technomic. Fast-casual sales are still experiencing fast growth relative to the overall restaurant industry, but the dominance by a few brands raises questions about whether there's room for new concepts and players, writes Food IQ's Daniel Campbell.
