Chef Homaro Cantu sees the kitchen as a science lab

Moto chef and owner Homaro Cantu is a whirlwind of progressive ideas, and his restaurant is living proof. Cantu is having an aeroponic farm installed in the restaurant's basement and is developing food he hopes will combat the obesity epidemic using the "miracle berry," which makes sour foods take on a sweet flavor.
