Proper cleaning in a food-processing work environment requires a prepared and educated workforce, Ed Kanegsberg and Barbara Kanegsberg write. When planning by zones, take care not to contaminate chemicals, they warn. "The least chance of cross-contamination of cleaning materials is to have separate janitorial cleaning in each zone. This includes not only separate cleaning equipment and supplies of cleaning agents but also personnel," they write.
