Llama is chic meat in Bolivia

Llama's rich flavor and low fat content are making it a popular choice in Bolivia's upscale restaurants, which are featuring the meat in dishes such as carpaccio topped with Parmesan and baby Swiss lettuce and paired with the Bolivian staple, quinoa. Some predict llama will soon be found on menus worldwide, but commercial production has not yet been established.
