Juice infusion slashes the fat in chocolate

Scientists from the University of Warwick have lowered the fat content of chocolate by up to 50% by infusing it with fruit juice. The technique doesn't change the consistency of the chocolate, but it slightly changes the flavor. Other liquids such as diet soda or alcohol may eventually be substituted for the juice, according to the scientists.
