Cold-pressed juice is gaining a mainstream following, and is now being offered by growing chains including Creative Juice, Juice Press, Organic Avenue and Starbucks-owned Evolution Fresh. BluePrint, a juice company founded seven years ago in a Queens catering kitchen, has been purchased by Hain Celestial and now grosses more than $20 million annually.
