Chipotle CEO on what's next for fast casual

Many different kinds of cuisine would be a good fit for the fast-casual model, where transparency is key and customers can watch each step in the meal preparation process, picking and choosing the fresh ingredients they want along the way, says Chipotle founder and co-CEO Steve Ells. The single service line is key to keeping the model efficient and keeping costs down, he says, boosting margins and allowing restaurants to invest in higher-quality ingredients.
