Coconut oil may be alternative to animal-based fats, RD says

Coconut oil is high in saturated fat, but more than half of it is medium-chain triglyerides that metabolize quickly, so they are likely to be used as energy instead of being stored as fat, registered dietitian Molly Kimball writes. Early research suggests coconut oil may have benefits for cholesterol and Alzheimer's disease symptoms, but Kimball writes that more studies are needed and for now it may just be a better alternative to animal-based saturated fats.
