Stuffed morels are a springtime stunner

Large, firm morels make for a tasty, indulgent meal when stuffed with sausage, seafood or beans. "They're little packets of goodness," said chef Jeff McInnis, who fills the morels with foie gras at his Yardbird restaurant in Miami. "The fattiness melts into the mushroom from the inside out."
