Consumer sodium concern is not reflected by behavior

Awareness and concern about the health risks of excess sodium are increasing, but sales trends of reduced-sodium food and drinks show that consumers are not acting on what they are learning. The challenge for makers of existing brands is to reduce sodium without harming taste or creating the impression that a food will have less flavor.
