Skip short-term food trends

During the Protein Innovation Summit in Chicago, Chandra Ram, the editor at Plate, said hotels shouldn't focus on short-term trends when it comes to choosing meals and ingredients. "Trend-watching isn’t enough," Ram said. "You want to be the company that sees the business opportunities, not the one who just limps behind following them."
