Add new flavors to ordinary dishes such as pizza, salads and burgers by swapping out everyday cheese with authentic Mexican versions such as oaxaca, panela and asadero. "The great thing about Mexican cheese is that it is very inexpensive," said cookbook author Amy Sherman. "These are not $29-a-pound cheeses; they are all very versatile and easy to use."
