Restaurant franchises react as sandwich category changes

More sandwiches are being consumed at restaurants rather than at home, and franchises such as McDonald's and Panera are aiming to keep up with fast-growing sandwich-focused chains such as Subway and Firehouse Subs. The key to the trend is a fresh-food message that appeals to millennials. "Subway was just another chain until it started marketing [its food] as healthy," says food consultant Joel Cohen.
