Flavanol levels vary by region

Barry Callebaut researchers say cocoa beans carry varying levels of beneficial flavanols depending on where they are grown. "The flavanol content ranges from 3% to 11% in non-cured dried beans," the company's Herwig Bernaert said. "Thus selecting the right region is crucial in making high flavanol products."
