Jellied desserts have always been popular, but in recent years they have experienced a renaissance. Most of us associate gelatin desserts with a classic 1950s home cook menu, but they date back to medieval times and have once again burst onto the scene with a retro cool vibe. Don't settle for your grandma's boring monochromatic Jell-O mold, though. Modern chefs can take jellied desserts in sophisticated directions with varying colors, fruit and other exciting flavor combinations.
