Moe's Southwest Grill marches west

Moe's Southwest Grill beat out larger rivals this spring for the title of top Mexican chain and the 500-unit fast-casual concept still sees plenty of room to grow as it moves westward to enter new markets, says President Paul Damico in this interview. "Fast casual is so popular today because people are continually trading down from full-service restaurants where they don't have customizable options and they don't have to pay a 20% gratuity."
