Oral pH stays elevated for 30 minutes after eating cheese, counteracting the effects of acid on dental enamel and protecting teeth from erosion, research from the Academy of General Dentistry found. Cheese also stimulates salivation and contains casein phosphate, both of which protect teeth, researchers said.
