French chef returns Michelin star in bid to boost business

Chef Olivier Douet made the painful decision to transform his Michelin-starred Le Lisita restaurant in Nimes, France, into a brasserie with simpler, lower-priced fare that better meets the demands of the current economy. Affordable bistros and brasseries are doing a booming business in France, while many higher-priced eateries are struggling.
