California salmon swims back into view

California salmon is making a partial comeback after state fisheries were closed for three years to preserve supplies. Since it will be relatively expensive and in short supply, the salmon is now suitable for special-occasion dishes such as the recipe offered here for crisp-skinned salmon with lentils, bacon and dandelion greens.
