Quickservice restaurants go big on cheese

Cheddar is served at 63% of American restaurants, making it the real "American cheese," says Benjamin Stanley, co-founder and vice president of product development for Food Genius, but taste trends have boosted the popularity of a much-wider range of cheeses at such eateries. Ten years ago, cheeses such as asiago and gorgonzola would not have been found on many quickservice menus, experts say, but that's changing.
