Chez Panisse, at 40, still fighting for change

Alice Waters changed the American culinary scene when she opened Chez Panisse 40 years ago, on Aug. 28, 1971. Instead of building a restaurant empire, she has focused her energy on advocating for healthful, organic food. "What Alice represents is this notion that a restaurant has a role to play, a social responsibility," said Michael Anthony, executive chef of Gramercy Tavern in New York.
