Schools struggle with proposed rule to limit starchy vegetables

Many school districts are opposed to part of a proposed USDA rule that would require school cafeterias to limit servings of starchy vegetables, including potatoes, corn and peas, to one cup per week. They say the proposed rule, which could take effect by fall of 2012, would eliminate vegetables that are a low-cost, popular, filling and nutritious part of the lunch menu.
