UMass raises bar on cafeteria food

Ken Toong, executive director of UMass Dining, presides over a dining hall with an all-you-can-eat sushi bar, brick-oven pizzas, a dim sum buffet and stir-fries that are made to order. The University of Massachusetts campus recently eliminated food trays in order to curb waste and water use.
