Causes of gluten sensitivity unclear, dietitian says

Gluten sensitivity may affect up to 7% of people, according to experts, but the causes remain unclear, registered dietitian Sheah Rarback writes. Possible causes may include intestinal inflammation, disturbance in the gut flora and exposure to high-gluten wheat. A panel of experts has suggested the diagnosis be made for patients who have a gluten reaction after clinicians rule out allergic and auto-immune causes.
