Colleges tread carefully when promoting Meatless Mondays

College foodservice providers and students are partnering to promote healthy eating on campus, including organic produce, sustainable meat and more real foods. Some groups also want to promote less meat, but Wesleyan University sophomore Manon Lefevre, who is part of WesFresh, says they are respectful when talking about meat and have to be careful in framing the approach to avoid a backlash.
