Vegetarian menus take center stage in October

October is Vegetarian Awareness Month, and while the percentage of Americans who identify themselves as vegetarians has remained about the same for two decades, according to Gallup, meatless meals have become much more mainstream. Nearly half of all Americans eat at least one meatless meal each week, and more eateries are offering options for patrons who observe Meatless Mondays.
