N.Y. farm grows Nordic ingredients

The owners of a Scandinavian restaurant group in New York City established a farm in the Catskills to provide local sourcing of the ingredients needed for the Nordic cuisine. The 150-acre Blenheim Hill Farm provides dill, lettuce, Finnish lambs, maple syrup and other ingredients to the four restaurants in the Smorgas Chef group.
