A single high-fat meal affected vascular function in healthy individuals who did not have cardiovascular disease, University of Calgary researchers told the Canadian Cardiovascular Congress. The study found microvascular function dropped after the meal, suggesting that impairment of the microvascular bed could be the link between high-fat diets and atherosclerosis.
