Chef Humm makes Thanksgiving sides sing

Daniel Humm, the award-winning chef of New York's Eleven Madison Park, offers recipes and suggestions for elevating vegetarian versions of classic Thanksgiving side dishes including cranberry sauce and mashed potatoes. His stuffing recipe starts with brioche, and adds herbs, vegetables, apples, chestnuts and figs, and he says when he creates dishes he works to "stay very focused on really showcasing everything on the plate so nothing gets lost."
