Sushi masters on the wane in Japan

Hachiro Mizutani, chef and owner of the three-star Sushi Mizutani restaurant in Tokyo, is one of the few sushi masters still serving food to customers. The practice is fading as casual sushi restaurants proliferate and as a next generation seems reluctant to begin the 10-year training process.
