Restaurant menus have evolved from simple lists of dishes into sophisticated documents that aim to convey the look and feel of the restaurant and forge a relationship with the customer, experts say. Creating just the right menu can be a complex process fraught with potential errors, but there's a simple test for determining if a restaurant has done it right. "I knew I had succeeded when customers started stealing the menus," said menu designer Matteo Bologna.
