"Molecular mixology" sidles up to the bar

Perhaps it was only a matter of time before bartenders began infusing their drinks with scientific techniques, a trend that some are calling "molecular mixology." Tony Conigliaro, bartender at London's 69 Colebrooke Row, serves drinks including "The Night Before the Morning After," a clarified Gin Fizz that erupts when drinkers add bicarbonate of soda.
