TransFair USA, a nonprofit group in Oakland, Calif., has become the standard setter for certifying coffee as Fair Trade, which intends to ensure coffee farmers are paid a living wage for their harvest. While Fair Trade coffee only accounts for $208 million of the $8.4 billion coffee market, several companies -- including Procter & Gamble, Wal-Mart, Target, Starbucks and Dunkin' Donuts have begun making or selling Fair Trade options.
