Madeira, a fortified Portuguese wine produced on an Atlantic island off the coast of Africa, ages so well that bottles produced in the 18th century are considered to be in their prime. Joseph DeLissio, wine director of the River Cafe in Brooklyn, N.Y., has been collecting rare Madeira vintages for years and is now planning to add them to the menu -- at up to $100 a glass.
