Though most people think Rob Roys should be made with sweet vermouth, the original recipe calls for dry vermouth, one bartender says. He makes the cocktail with Scotch, dry vermouth and a couple of dashes of orange bitters, an update that adds complexity.
"We're making food with the latest technology, with the latest understanding of how food reacts to certain circumstances," said Judd Canepari, executive chef at El Bizcocho in San Diego. The salad, for example, could consist of round and crunchy beet macaroons, and the Dover sole might have black and white stripes.
