Lobster fra diavolo and lobster and corn chowder are among the dishes returning to restaurants and home kitchens because of falling lobster prices. "Now we can afford it again," said Jennifer Jasinski, chef and owner of Rioja in Denver, where lobster club sandwiches and a lobster and mascarpone risotto are on the menu.
A national "Meatless Monday" campaign says eating like a vegetarian one day a week can yield health benefits. "Once someone realizes how good vegetarian dishes can be, they are more likely to eat them," said Dr. Andrew Weil, a nationally known health and lifestyle guru.
When well made, dishes centered on grains such as farro, brown rice, bulgur or spelt can be deeply flavorful as well as healthful. Quinoa salad with shiitakes, fennel and cashews can be varied by using different grains.
