That was the case with Jeff Varasano, a software company employee and pizza fanatic who once posted a 22,000-word recipe online and cut the safety lock off his oven to get it hot enough for a perfect crust. In March, after making almost 900 pizzas and destroying at least two ovens in his Atlanta home, he quit his day job and opened a pizzeria bearing his name.
