When employees at the University of Tennessee's Extension Office dress up as vegetables and head to elementary schools to talk about healthy eating, nutrition staff report serving two to three times more veggies at lunch. The Tennessee Nutrition and Consumer Education Program is part of a two-pronged approach to fighting childhood obesity; the second approach provides healthy snacks to children in their classrooms through the U.S. Department of Agriculture's Fresh Fruit and Vegetable Program.
