A study in Finland found that children and teens ages 3 to 18 who consumed fewer fruits and vegetables had stiffer arterial walls, a risk factor for atherosclerosis, compared with those who ate high amounts of fruits and vegetables. A separate Finnish study found that children who exhibited the most risk factors for heart problems at age 9 were 37% more likely than other children to develop thicker carotid artery walls in adulthood.
