Several Los Angeles-area restaurateurs have taken advantage of lower post-recession rents to super-size the space for their newest ventures, including Mas Malo, Cafe Entourage and Rolling Stone Los Angeles, which range in size from 7,000 to 10,000-square-feet. Some, including New York transplant Laurent Halasz, who operates the 8,000-square-foot Fig & Olive, are splitting up the space to create a more intimate experience. "When you sit, you are in your own dining room and you only have 30 to 40 seats around so you feel comfortable," he said.
