The gut's breakdown of dietary fat -- lecithin -- during digestion was a much better predictor of heart disease risk than cholesterol levels and could be used as a screening tool, according to Cleveland Clinic researchers. The study in the journal Nature found that when lecithin breaks down in the gut, it forms choline, TMAO and betaine, all of which had a "dose-dependent" link to heart disease.
