The number of dairy goats in the U.S. has grown from 335,000 to 2007 to 360,000 today, as demand for goat cheese rises. Vermont farmer Chris Lekberg switched from cows to goats and said, "The thing that's definitely better about this than the cows is the price stays the same so you know what you're getting per pound of milk all the time."
